From Vancouver to Dublin: a shucking revelation
My oyster journey began unexpectedly in Vancouver, Canada. What started as a way to sort a visa, working at a new oyster bar, quickly became an obsession. I fell for everything: the mesmerising process of shucking, the camaraderie of fellow shuckers, the thrill of competitions, and even a surprise appearance on live morning TV. It was the passion of the people and the art of plating a great oyster dish that truly hooked me.
Bringing the craic home: Ireland's oyster renaissance
Returning home to Dublin, I realised the incredible quality of our own Irish oysters. The cooler waters here produce some of the best in the world, and it felt only right to share the passion I'd cultivated abroad. Overboard Oysters is my way of celebrating these local treasures, bringing that unique shucking fun, the history, and the vibrant 'craic' of the oyster scene back to Ireland.
